Allrecipe : How To Make Veg Rice Noodles Recipe

Here is a simple recipe for vegetarian rice noodles:

Ingredients:

  • 8 oz. rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 small carrot, sliced
  • 1/2 cup snow peas
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced
  • Fresh cilantro, chopped
  • Crushed peanuts, for garnish

Instructions:

  1. Cook rice noodles according to package directions, and set aside.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat. Add garlic, ginger, and onion, and cook for about 1 minute, stirring frequently.
  3. Add the sliced bell peppers, zucchini, yellow squash, carrot, and snow peas to the skillet. Cook for 5-7 minutes or until vegetables are tender, stirring frequently.
  4. In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce, rice vinegar, and red pepper flakes (if using).
  5. Pour the sauce over the vegetables, and stir to coat evenly. Add the cooked rice noodles to the skillet, and toss everything together to combine.
  6. Top with sliced green onions, chopped cilantro, and crushed peanuts for garnish.
  7. Serve hot and enjoy your veg rice noodles!

Optional variations:

  • Add sliced mushrooms or baby corn to the vegetable mixture.
  • For a spicy kick, add a teaspoon of chili garlic paste or sriracha sauce to the sauce mixture.
  • Use tofu, seitan, or tempeh instead of vegetables for a protein-rich variation.
  • Substitute tamari or coconut aminos for soy sauce for a gluten-free version.
