Here is a simple recipe for vegetarian rice noodles:
Ingredients:
- 8 oz. rice noodles
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1 small carrot, sliced
- 1/2 cup snow peas
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, sliced
- Fresh cilantro, chopped
- Crushed peanuts, for garnish
Instructions:
- Cook rice noodles according to package directions, and set aside.
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add garlic, ginger, and onion, and cook for about 1 minute, stirring frequently.
- Add the sliced bell peppers, zucchini, yellow squash, carrot, and snow peas to the skillet. Cook for 5-7 minutes or until vegetables are tender, stirring frequently.
- In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce, rice vinegar, and red pepper flakes (if using).
- Pour the sauce over the vegetables, and stir to coat evenly. Add the cooked rice noodles to the skillet, and toss everything together to combine.
- Top with sliced green onions, chopped cilantro, and crushed peanuts for garnish.
- Serve hot and enjoy your veg rice noodles!
Optional variations:
- Add sliced mushrooms or baby corn to the vegetable mixture.
- For a spicy kick, add a teaspoon of chili garlic paste or sriracha sauce to the sauce mixture.
- Use tofu, seitan, or tempeh instead of vegetables for a protein-rich variation.
- Substitute tamari or coconut aminos for soy sauce for a gluten-free version.
